Mint Mini Cheesecakes

So these beauties right here are uh-maze-ing! They are the perfect blend of cheesecake and mint it will blow your mind! PLUS just look at those calories uh ya of course you can have 2! I was trying to think of a fun holiday using the awesomeOikos Organic Greek Yogurt. Why was I doing that? Well first of all it is amazing for you this stuff is real Greek yogurt! It gets its creaminess not from added gums, thickeners or milk fat they use a straining method. This straining process gives Greek yogurt about twice the protein of regular yogurt, and less lactose. This stuff is all organic so you know you are getting the best of the best. You guys need to give it a try! Now check out these delightful cheesecakes!

Serving Size: 1 cheesecake

Here Are Your Ingredients:
24 mint oreos
8 oz 1/3 less fat cream cheese, softened
8 oz fat free cream cheese, softened
1/2 cup sugar
2 tsp vanilla
12 oz fat-free vanilla Greek yogurt (I used Oikos Organic - Plain)
mint m & m's (3 each cheesecake)
4 large egg whites


Directions:
Heat oven to 350 degrees. Line cupcake tins with liners. Place an Oreo at the bottom of each liner. Gently beat all ingredients in medium mixing bowl. Do not over beat. Pour into cupcake liners filling half way. Cook for 20-25 minutes. Add 3 m&m's per cheesecake. Place in refrigerator for 3-4 hours.
